What is Beyond Sushi?
Beyond Sushi, a restaurant chain, sells a plant-based alternative to traditional sushi. Its vegetarian dishes are popular among vegans. Beyond Sushi uses fresh grains, fruits, and vegetables to create sushi that is as tasty as it is beautiful.
Guy Vaknin, a native of Israel, learned to cook from his grandmother. He served in the military before moving to America to pursue a degree in computer engineering. He was later educated at The Institute of Culinary Creations. His wife and business partner, Tali, has a business degree from the Laboratory Institute of Merchandising.
Vaknin took over the family’s cooking when his parents got divorced. He worked various jobs in the restaurant field before later opening a catering business with his father. He and Tali opened their first restaurant in 2012 using her vegetarian background as a springboard for recipes.
